anna's top tips

  • Crimping the edge of your pie dough is more than decorative – it secures the pastry onto the edge of the pie plate.
  • Blind baking a pie crust is essential for pies that have pre-cooked fillings.  To do this, place foil over the pastry-lined pie plate and top the foil with dried beans or rice.  Bake the crust for 15-20 minutes then lift the foil (and weights) off to finish baking.
