anna's top tips

  • When baking a sweet soufflé, grease and then coat the dish with granulated sugar.  For a savoury soufflé, grease and then coat the dish with breadcrumbs.  This helps the soufflé climb as it bakes and rises (if only greased, the soufflé might slide down and sink)
  • the tall, straight sides to this dish is what coaxes the most height from your soufflés.
