anna's top tips

  • When melting or tempering chocolate, it’s best to use a metal bowl (over glass), when placing the bowl over a pot of barely simmering water. The metal bowl conducts the heat quickly, but does not hold it so that once you remove the bowl from the heat, your chocolate won’t rise above the desired temperature.
  • A common kitchen error is using a bowl too small for the task. You need to factor in space for whisking and stirring properly, but also splashing as you mix, in order to enjoy your time in the kitchen.
