Using a hand tool like this pastry blender is also a good teaching tool, because when you work your butter into your pie pastry or scones dough you can feel it working in with each press and twist, so that you can get to know the point when it is worked in enough to add the liquid.

This tool is designed to work butter evenly into pie pastry and scone dough.

This pastry blender evenly distributes ingredients into flour in order to keep pastry doughs tender and avoid overmixing

anna's top tips

  • This tool is most helpful when working cold butter into flour. Start by cutting the butter into small pieces and after adding, use twisting motions with the pastry blender to break the butter into smaller pieces. Once the butter works in a bit, switch to rocking back and forth as you lift the tool and rotate the bowl.
  • You may have to run your hand along the wires to release the butter at first, but as the butter breaks down into smaller pieces, it will no longer stick.
