anna's top tips

  • Brushing pastries and scones with an eggwash promotes even browning and results in a lovely shine. An eggwash is made by whisking 1 egg with 2 Tbsp (30 mL) of cold water, and it can be stored refrigerated for up to 4 days, for repeated use.
  • After hand washing your pastry brush, air-dry it with the bristles upright, so that the brush holds its shape.
