anna's top tips

  • Always make sure your crème brulée dish is resting on a non-flammable surface such as a baking tray (no parchment paper).
  • When torching the top of a crème brulée, add the sugar in layers, sprinkling small amounts on and torching lightly before adding the next layer.  This ensures that the sugar melts and caramelizes evenly.
