I now reach for a silicone spoon spatula in place of a wooden spoon. The curve of the spoon holds and pulls my batters well, and it holds its shape, so even a firmer batter can be stirred easily. I like the silicone grip so that my hand doesn’t slip when stirring, but also because the grip keeps the spatula in place if I rest it in my mixing bowl.

anna's top tips

  • I like to use this spoon shaped spatula when I am folding whipped cream or egg whites into a batter or mousse.
    - Generally it’s best to fold ingredients gently but quickly – sometimes we try to be so careful, that we take twice the time we should and the cream or egg whites deflate the longer we spend mixing them.
  • Scraping your bowls and pans is the easiest way to prevent food waste (a lesson we learn early on in cooking school), and a well-scraped bowl is easier to clean!
