I’m a bit of a “Goldilocks” when it comes to whisks – too flimsy and I can’t combine my batters and mousses well, and too tight and batter gets stuck in the wires of the whisk. This whisk is “just right” – a sturdy handle holds wires that keep their shape but aren’t too thick.

anna's top tips

  • When starting to fold whipped cream or egg whites into a batter or mousse, I often start by using a whisk. The whisk gently pulls the cream or whites into the batter without deflating them. Once half incorporated, I switch to a silicone spatula or spoonula.
  • It’s a common mistake to choose too small of a bowl when whipping cream or whisking batters. A larger bowl gives you a wider swath with each whisking stroke, incorporating air or ingredients faster and with less splashing. A larger bowl also means that the whisk is less likely to fall out when rested on the side of the bowl.
