- Pulse all of the ingredients except for the sesame seeds in a food processor until evenly combined. Chill the mixture for 90 minutes.
- Use a small ice cream scoop to spoon tablespoonfuls of the mixture and shape each into a ball. Roll each gem into the sesame seeds to coat completely and then store in an airtight container.
The gems will keep unrefrigerated for up to a week, or refrigerated for up to 3 weeks.
